Healthy Cauliflower Fried Rice For Fall

As soon as the temp hits below 15 out there, I’m all about the comfort food.

Chili. Pasta. Fried Rice. Mmmmm.

The thing is, all these classically cozy dishes aren’t really going to help you get the results you’re looking for in the gym.

I mean, yes, who wouldn’t gladly eat a pan of veggie lasagna. But I don’t think a pound of cheese is the way to power ANYONE through one of these fast and furious butt-shaping workout.

So I figured it’s time that I come up with a ‘healthier’ alternative to my favourite fall dishes (aka: Healthy Cauliflower Fried Rice).

I don’t love using the term ‘healthy alternative’ because you know I’m all about listening to your bod and eating the foods you want in moderation if you’re really craving them.

But, the reality is, if I ate authentic fried rice every day, I probs wouldn’t be able to do my job. LOL. I’d turn into fried rice.

While I’ve been recipe testing, I’ve come across one ingredient that I go to again and again and am now officially obsessed with.

CAULIFLOWER RICE.

Plus you can make it yourself when you’re being all super organized, or buy it ready to go in the produce or freezer section (the much more likely option) 😉 

Below is my go-to recipe for Healthy Cauliflower Fried Rice, but before I share, I just have to let you know all the other less traditional ways I’m using this veggie in my meals. 

  •     Use cauliflower rice to bulk up a bowl of chili
  •     Add ¼ – ½ cup to your smoothie for a low-sugar switch up
  •     Throw in a pan with some marinara, veggies, and shrimp for a jambalaya-esque dish
  •     Sub in for rice in a burrito bowl
  •     Apparently cauli-oats are also a thing!

Okay, you get my drift. Literally eating cauliflower every day for every meal.

Ingredients
  • 2 tsp sesame oil Sub olive oil
  • 2 cups cauliflower rice (I used frozen)
  • 1 cup green peas (I used frozen)
  • 1/2 cup bell pepper, chopped
  • 1/4 cup mushrooms, sliced
  • 2 eggs
  • Green onion and parsley, for serving
  • 1-2 tbsp Coconut aminos Can sub w soy sauce
  • sambal oeleck Optional, for spice

Instructions
  1. Heat a large pan with the oil over medium heat. While pan heats, add one egg with salt and pepper to a small bowl and beat with a fork.
  2. Sauté peppers and mushrooms until cooked through, about 5 minutes. Set aside.
  3. Add cauliflower and peas to pan. Cover with a lid. Let sit for 3 minutes. Remove lid and stir periodically while veggies continue to cook, about 5 minutes. Add back in the peppers and mushrooms.
  4. Pour egg mixture into pan and scramble with the vegetable fried rice mixture. Add in coconut aminos to taste. Remove from pan to your plate.
  5. Quickly place pan back on heat and crack second egg to fry in pan. Cook until cooked to desired doneness (a runny yolk is oh so good here).
  6. Place egg on top of fried rice. Season with salt and pepper and add green onion and parsley.
