Whole Wheat, Yogurt, Cinnamon Banana Bread

Personally, I hate bananas. I hate the way they smell, I hate their texture, and I hate how everyone LOVES THEM. But I do enjoy banana bread which is super weird, but I accept it. If you are one of those people who keep bananas in your freezer for decades, promising that you will use them for something, then this recipe is for you! I admit, I am one of those people; so one day I decided to make this banana bread, and it is amazing! It’s fairly healthy and uses yogurt as one of the wet ingredients to mix it up a bit and make it deliciously MOIST. There is still a bit of butter in it, but compared to other recipes out there it cuts it down by half. If you don’t have whole wheat flour, no worries – just stick to white flour. The difference in taste is minimal

Serves: 1 loaf
  • ½ cup sugar
  • 2 eggs
  • ¼ cup butter
  • 1 ½ teaspoons cinnamon
  • 1 cup plain yogurt
  • ¾ cup white flour
  • ¾ cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed ripe banana (about 2-3)
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup chocolate chips (optional)
  1. Grease one 5×9-inch loaf pan
  2. Cream margarine, sugar and eggs
  3. Add dry ingredients, then mashed bananas, nuts, and yogurt. Add chocolate chips, if using. Mix well.
  4. Bake at 350°F for 1 hour and 15 minutes
