Whole Wheat Avocado Banana Chocolate Chip Muffins

I guess I’m just on a huge banana-baking spree at the moment. I went to the grocery story and bought a billion avocados and they all turned ripe at the same time so I needed a recipe that would use an avocado and wasn’t guacamole. I remember watching my roommate one time do some baking with avocados so I looked up some recipes and found this one! It’s unbelievably yummy, you can’t taste the avocado at ALL, and it is shockingly healthy.

Whole Wheat Avocado Banana Chocolate Chip Muffins

Ingredients
  • 1-3/4 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 2 Tbsp coconut oil, melted
  • 1/4 cup honey, melted
  • 1 ripe avocado mashed
  • 1 ripe banana mashed
  • 1/2 cup dark chocolate chips
Instructions
  1. Preheat oven to 350F. Line a muffin tin with paper liners or grease with butter
  2. In a large bowl, combine flour, baking powder, and salt.
  3. In a medium bowl, whisk together eggs, coconut oil, honey, avocado, banana, and vanilla. Add to flour mixture and stir until just combined. Fold in chocolate chips.
  4. Spoon batter into muffin cups. Bake for 20 – 25 minutes, until a toothpick inserted into center of muffin comes out clean.

    So good! I have to admit, I didn’t follow the recipe to the letter, but pretty close… I used regular all purpose flour, milk chocolate chips, and added a tsp of cinnamon. My toddler is currently begging me for seconds!
