What I Ate Wednesday: #WIAW Virginity Taken

It has taken a LOOOONG time, but the day has finally come for me to do my first ever What I Ate Wednesday post! (Also known as WIAW – way less typing required).

I’ve been thinking about doing this for a long time, but I was on the fence for a while. I kept thinking – why would anyone really be interested in what i’ve eaten during the day? I don’t eat meat, so already a huge chunk of recipes are already taken out of the equation. Also, I tend to eat the same thing during the week for dinner, so there wouldn’t be much variety. Lastly, every time I take photos of food with my iPhone, they always turn out so awful looking that I couldn’t bear to post them online.

Those three reasons are what held me off for agessss, but then I thought of it in a different light:

a) Seemingly more and more people are becoming vegetarian or pescetarian these days. Those that still eat chicken and turkey tend to avoid red meat, and are looking for more meatless options. So perhaps my abundance of fish/egg/tofu meals wouldn’t be too offensive for most people

b) Rather than continuing to eat the same thing every evening for dinner, this would be a fantastic opportunity for me to try out some new meals that could be made fairly quickly in the evening, while utilizing all my groceries in several different recipes

c) Lastly – my iPhone photos! I always say to focus and work on the areas you can improve, rather than continually exploiting your strengths. One thing i’m still working on every day are my photography skills. I want to get better at capturing pictures, and knowing that they will be posted online for everyone to see will encourage me to work harder at getting that perfect shot!

After reading those three justifications for my WIAW quandary, you MIGHT say that i’m am literally the most positive person in the world (in the words of Chris Traeger). But in the end I want to do this to help you find some inspiration for your snacks and meals, and also to see that I don’t eat ‘clean’ 90% of the time. Even 80% of the time. There are a lot of pizzas that are thrown in throughout the week 😉

So without further adoooo, please admire my first ever WHAT I ATE WEDNESDAY:

Breakfast

Plain Greek yogurt, thawed frozen blueberries, nectarines, topped with hemp seeds, chia seeds, and buckwheat groats.

Mid Morning Snack

English muffin toasted with crunchy peanut butter + homemade blueberry jam

Asian lettuce salad topped with sauteed smoked tofu + peanut lime dressing

Dinner

Swordfish steak with roasted red onion, red pepper, asparagus, and homemade potato fries

      Haha I wish I had the means to make it myself, but i literally buy ‘smoked tofu’ from the grocery store and then sautee it at home. but its SO GOOD. i love it more than regular tofu

  4. I haven’t done a WIAW post either for some of the same reasons. I ate a really yummy watermelon salad with pistachios. YUM!

    haha we love Chris Traeger! Love that english muffin .. one of my favorite snacks! I made some corn fritters / cakes the other day – so summery! Probably my favorite thing I’ve ate all week 🙂

    I FRIGGIN ADORE SWORDFISH!!!!!! But I barely eat it thanks to the mercury! 🙁 Womp womp. But every so often, I just dig in and say TO HELL WITH IT!

      Haha i think it was the second time in my life ever eating it!! I felt weird about it though… something about a swordfish makes me feel like 10x worse than just eating a regular ol chunk of tuna haha

    What a cool idea! 🙂 Hmmm, let’s see: I had homemade crispy crumble with blueberry in the morning (recipe to come), then I had an apple, one peach and half of grapefruit as a snack, lunch was a BIG sandwich with smoked salmon, avocado and mozzarella and dinner – a Greek salad. Did I eat too much? :)))

  10. I absolutely love this WIAW! I always love seeing a little peak into what people are eating. Yesterday I had a green smoothie for breakfast, larabar for a snack, then lunch was leftover grilled chicken patties and roasted cauliflower and beets, afternoon snack was strawberries and string cheese and then dinner was a chicken enchilada and some whole grain chips. I’m trying to lose weight so I’m totally going to be stalking your site for inspiration 😉

  14. I absolutely love this idea and your pics are great! That blueberry Greek yogurt business is totally drawing me in! I could take some tips from you on some healthy eating. I didn’t do too badly this week – although I confess to some chips and queso. I’ve actually been on a scallops kick lately. Fast, easy, and delicious!

      Mmm scallops are my all time favorite food!!! I wish they were a liiiiiittle bit cheaper otherwise i actually would eat them every day.

  15. Love that you decided to do a WIAW post. It’s always so much fun to see what everyone else eats, your meals look awesome and very similar to mine too 🙂 My husband on the other hand always has to have meat for his meals haha. The homemade jam looks and sounds fantastic!
