Veggie Fajitas

My mother used to make these at home all the time when I was growing up and I LOVED them. For the first time I made them on my own, and I must say: mine were probably better than hers!

(Just kidding Mother! They were pretty much the same πŸ˜‰ )
Since I don’t eat meat I used Yves Veggie Ground Beef that you can buy in any grocery store EVEN No Frills. Here is how I make them

Ingredients

1 medium carrot
1 pepper (any color)
4/5 mushrooms
ΒΌ onion (red or white)
Β½ zucchini
1 head of broccoli
Yves Veggie ground beef
Cheddar cheese
Salsa
Tortillas
Fajita seasoning

Method

Chop up all the vegetables and stir fry them for about 5 minutes. Add the veggie ground beef and a bit of water. Add 1 tbsp of fajita seasoning. Allow everything to cook for several minutes.
Scoop however much filling you want into a tortilla. Serve with grated cheddar cheese, salsa, and whatever else you want!
