Sweet Potato Black Bean Chili

IMG_6736IMG_6740IMG_6778Chili is by far one of my favorite dishes to make. When I was younger I used to LOVE going to Tim Hortons and ordering the chili for lunch. Pair that with a warm, toasted buttery bun – you’ve got yourself a KILLER combination. But when I decided to cut meat out of my diet at the ripe age of 13… it also included cutting out my delicious Tim Hortons chili. Tragic times for a 13 year old.

Everything turned out okay though – especially now that I know how to cook it myself. This chili recipe is high in protein containing both kidney and black beans, but also has a special addition of sweet potato to it. Sweet potatoes are high in fiber and contain vitamins and minerals that are essential for your health. Pair this chili with a warm, toasty bun or top it with sour cream and cheddar cheese.

Sweet Potato Black Bean Chili

Serves: 4 bowls
Ingredients
  • 4 garlic cloves, minced
  • 1 red onion, chopped
  • 1 green bell pepper, chopped
  • 1 medium sweet potato, peeled and cubed
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ¼ teaspoon ground cinnamon
  • ground sea salt and black pepper
  • 28-ounce canned diced tomatoes, including liquid
  • 1 can black beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 500 mL vegetable broth
  • Cheddar cheese grated
  • Sour cream (optional)
Instructions
  1. In a large saucepan, sautée the onion, peppers and sweet potatoes in olive oil on medium-high heat.
  2. After about 5 minutes, turn the heat down slightly. Add the garlic, chili powder, cumin, cinnamon, and salt and pepper and tomatoes, beans and broth, and stir.
  3. Cover and cook for about 45 minutes stirring occasionally, or until the sweet potato is soft and cooked through
  4. The liquid should have reduced slightly, so it has a thicker consistency.
  5. Top with grated cheddar cheese and sour cream (optional)

  2. Agree w/ Deborah’s comment above…sweet potato and black bean chili is always a winner in my book. So much better than the canned variety (though I have to admit, some canned chilis are pretty good, too!).

    Love sweet potatoes in chili, mexican food, or any way I can get them! I thought I was done with chili for the “season” but now I’m really craving sweet potato chili again!!
