Salted Gluten Free Walnut Brownies

We gon’ get personal.

Ever since I got my IUD put in, I don’t get a visit from Aunt Flo anymore. No more waving the red flag. No more Shark Week.

You picking up what I’m putting down? Basically I don’t get my period any more (AHHH sorry boys, the P word!!)

HOWEVER. Getting your period really does give you an excuse to eat as much chocolate as you wanted, be a total cow for a week, and not feel bad about eating ice-cream while binge watching Netflix. And now I don’t have that excuse any longer.

(Correct – somehow I spun the fact that even though I’m lucky enough to never get my period, you should still feel sorry for me. All a girl wants to do is eat chocolate!)

Anyway, since I don’t have any excuse to eat unlimited amounts of chocolate, cookies, and ice cream for once a month for a week, I had to come up with my own ‘guilt free’ version of gluten free walnut brownies. No period required for these babies! (Haha, that sounded gross. Okay i’m done).

Like most of my baking these days, I’ve substituted coconut oil in for regular butter (just like in this Chocolate Chip Banana Bread recipe) for a bit of a healthier twist. If anything, it just makes the recipe 10x better. You don’t notice any difference, and if you do, it’s just the light, delicate taste of coconut in each bite. Divine!

Another thing I did to make this recipe a bit healthier was use almond flour instead of regular flour. You can buy almond flour from any bulk store (I get mine from Bulk Barn), or I believe Bob Red Mills sells it too.

I went TER TOWN on these guys, and literally ate 4 of these gluten free walnut brownies in less than 2 hours.

Okay it was 1 hour.

With the rest, I saved them in a container and then cut them up and sprinkled them over my smoothie bowl in the mornings – MAGIC. Seriously, try it out. Also, the salt on top is totally optional, but I don’t know why you wouldn’t use it. Salt + chocolate is fantastic (as evidenced in my homemade almond butter recipe).

Ingredients
  • 3/4 c almond flour
  • 1/2 c cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 c brown sugar
  • 1/2 c melted coconut oil
  • 2 eggs whisked
  • 1/2 c chocolate chips
  • 1/3 c walnuts chopped
  • 1 tsp seasalt (optional)
Servings:
Instructions
  1. Preheat oven to 350 degrees. Grease a 9x9 inch pan with coconut oil. In a bowl mix together the almond flour, cocoa powder, baking powder, and salt.
  2. In a second bowl combine the brown sugar, coconut oil and eggs, and mix thoroughly
  3. Pour the wet ingredients into the dry ingredients, and stir with a spatula. Add the chocolate chips
  4. Pour the batter into the pan and smooth out. Top with the crushed walnuts and sea salt. Add more chocolate chips on top if you desire
  5. Bake for 20-25 minutes in the oven (or until a knife comes out clean). Allow to cool for 15 minutes. Cut into squares and enjoy

    I am the worst chocoholic during that time of the month! I’ll literally eat froyo for dinner with all the toppings. I’ve always been a sweet and salty fan too so this combo is right up my alley!   9. I really don’t think a girl needs to be on her period to have chocolate. I mean there are just so many reasons to eat it. For example somebody bumps into you on the street, the cashier was rude to you in the supermarket, you missed your bus – you need chocolate happiness. Or you have birthday, a new blog post, or simply found beautiful shoes on sale – you have to celebrate with chocolate. Plus there are the times you need to reward yourself: after a workout, when you ate a salad, when you didn’t press the snooze button for the 5th time, etc…. 😀
    Anyway, these brownies look super yummy, I love that you used almond flour. Pinned, I wanna try them soonish (I guess apple sauce could be a good egg replacement here)!
