My Low Carb Paleo Breakfast for Summer

Lol. Guys. I used the word Paleo and Low Carb for the first time EVER on this blog.

Who am I?

Just to be clear – I love carbs, and I will never ever become fully paleo for three reasons:

  1. Cheese
  2. Pizza
  3. Dim Sum

All three reasons are weighted equally and are important in my decision.

Let us just go back a little bit here so I can explain this a better – A couple weeks ago I was talking with a trainer about how I can ‘shred’ my arms a bit more. My arms are fine, but I wanted them to look a bit more defined and less bulky. Sometimes I feel like my biceps, triceps and lats don’t have room for each other when I walk. I’m literally not joking.

One of the things he said to me was to eat my carbs later in the day, when I worked out. If you workout in the morning, replenish with carbs then. If you workout in the afternoon – vice versa.

Instead of carbs, he advised me to fill up on high protein and good fats for breakfast – avocado, eggs, veggies, etc. (He also mentioned that he eats tilapia for breakfast, but I thought that was just a bit too intense for me). Eggs it would be.

I’ve been eating this low carb paleo breakfast for the past three weeks and I’m absolutely LOVING it. To be completely frank, I haven’t noticed a big change in my arm definition. Perhaps that’s because I indulge in too much of my three anti-paleo reasons to really make a significant difference.

This low carb paleo breakfast is also (surprisingly) so simple to take to work. Some people don’t like to have eggs first thing in the early morning, and I am definitely one of those people. Instead, i’ll chop up my veggies and saute them in coconut oil and chili flakes for 4-5 minutes. Then I add them to a container once they’re finished cooking.

After that I fry two eggs (in the same pan), and break up the yolk a bit. Once those are cooked I add them on top of the veggies and sprinkle with some sea salt. I usually won’t eat it till about 9:30 am, and at that point i’ll heat it up for 20 seconds in the microwave.

Honestly it’s the quickest meal ever, and it saves SO much time at home. You can use basically any vegetables that you want – kale, spinach, tomatoes, onions, etc. Pictured here I used tomatoes, zucchini, and mushrooms.

Using coconut oil is also one of my favorite ways to saute vegetables – the oil thickens almost into a sauce with the veggies making it so much more delicious and tasty! Seriously, you have to try it.

Ingredients
  • 2 eggs
  • 3 mushrooms sliced
  • 1/2 zucchini sliced
  • 1/2 tomato chopped
  • 2 tsp coconut oil
  • 1/2 avocado mashed
  • 1 tsp chili flakes
  • 1 tsp salt
  • 1/2 lime (optional)
Servings: serving
Instructions
  1. Slice and chop the vegetables you are planning to saute. While you are chopping, heat up the coconut oil in a small frying pan
  2. Add the chopped veggies to the pan, sprinkle with salt and chili flakes. While they are softening, mash the avocado in a bowl, sprinkle with salt, and lime (optional).
  3. Once the veggies are sauteed, place them on a plate and cover. Crack the two eggs into the frying pan and cook for 1-2 minutes (depending on how yolk-y you like them!)
  4. Add the fried eggs to the plate with vegetables and add the guacamole to the side. Top with more chili flakes (if desired) and salt and pepper

    This sounds great I agree with his logic even though I don’t always follow it. I consider myself Paleo-ish because I still enjoy some non-paleo foods. Great recipe, great post.

  3. I don’t think I could ever go paleo. My sister convinced me to do a Whole30 with her before I totally understood the restrictions… needless to say, I opted OUT of that one. But this looks delicious and so simple! And thanks for the tips – normally when I lift, I refuel with protein and not carbs so I will have to give this a try!

  5. My boyfriend and I argue all the time about whether scrambled eggs or fried are easier. I am an advocate of the fried egg because literally all I do is crack it in the pan and walk away lol. Love me some eggs but would never go paleo because I love trying new thing and eating out waaaay too much

  6. This sounds like a great breakfast! I recently rediscovered my love for eggs…especially for a quick dinner when I don’t feel like cooking! 😉 I could never be fully paleo because there’s no way I would ever give up peanut butter (ever)!!!!

    I’m trying Paleo right now for myriad digestive + chronic pain reasons. Pizza and cereal are my two hardest things to “give up” – but you can make so many other delicious things, so I’m choosing to focus on that! And I love, love, love eggs 🙂

  11. BOOMTOWN this looks like my breakfast like every single day, except I add a ‘lil sweet potato for my carb fix. I totes follow the Paleo lifestyle but from time to time I say F it and indulge with things my body is craving. Cause life is too short. And pizza…’nuff said

  13. I guess you could say I eat a PALEO life style, however, I am even more restricted thanks to all of my ridiculous issues. I cannot eat nuts and seeds. I cannot eat fruits. I cannot eat dairy and I know some paleo lifestyles include things like ghee into the mix. I have lived like this for 15 years and I have to say, I miss nothing. Nothing at all. The foods I eat, I adore, and they fill any “void” that I have… Seriously. I cannot get enough salmon. And I have found amazingly delicious cuisines (ahem, shawarma yo) that my body can handle 🙂

  14. I tend to do mostly paleo because of all my food allergies, but I love oatmeal and pizza too much to do it full time haha. That said, eggs and avocado is one of my favorite breakfast combos!
