Asian Kale Salad with Peanut Dressing and Smoked Tofu

When I think of Asian cuisine, I normally think of noodles, sushi, curries, or basically anything in a dumpling. I don’ttt really think of salads. Except for seaweed salad that comes with sushi. But then again, that’s not really a salad either, it’s just a bowl of seaweed, disguised as a salad.

If you’ve ever had the salad rolls at a Vietnamese restaurant, you know first hand how frigging delicious that peanut dipping sauce is. It’s like crack. I use the entire bowl for one roll, and then use my finger to make sure i’ve gotten all of it. Adam sits quietly through this routine, wondering how he got so lucky.

Luckily though, these are Asian restaurants, and they don’t charge if you order more. They know how good that shit is.

Since making homemade salad rolls is basically a full-day activity, (it’s really not as easy as they make it look on YouTube), I wanted to create a simpler recipe that I could basically drown in peanut sauce.

I’ve made this Asian Kale Salad with Peanut Dressing so many times now, and my favorite thing about it is how versatile it is. Sometimes i’ll use smoked tofu (I like this one) as a protein, other times i’ll use grilled shrimp. I recommend smoked tofu over regular because it’s only like, $1 more, but 100x tastier than the regular stuff. Also, no tofu pressing required! All you have to do is saute it with some oil and you’re golden (or at least your tofu is, heh heh)

The salad itself is super simple. I use kale because I like the added vitamins, but some might find it a bit too tough when its raw. Instead you can sub in romaine lettuce, OR even cabbage! The most important ingredients to making this an ‘Asian’ salad is to add red cabbage, red peppers, edamame beans, and carrots. If you’ve got green onions and peanuts – that makes it even MORE Asian. Congratulations.

Like most of my recipes, i’ll bring my Asian Kale Salad with Peanut Dressing as my lunch for a week. It makes sooo much, and is so simple to bring. Just bring your protein in a different container and heat it up before adding it in.

Ingredients
Kale Salad
  • 1 large bunch kale chopped finely
  • 1 red pepper chopped
  • 1/2 head red cabbage sliced
  • 2 carrots peeled and grated
  • 1 cup edamame beans thawed
  • 4 stems green onion chopped
  • 1/4 cup peanuts
  • 1 package smoked tofu
Peanut Dressing
  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1/4 cup warm water
  • 1/2 lime juiced
  • 1 tsp chili garlic sauce
  • 1 tsp hoisen sauce
  • optional: ginger grated

Instructions
  1. Chop up the kale, red pepper, and carrots and add to a large bowl. Peel and grate the carrots, and add in your thawed edamame beans. Mix well
  2. Cut up your smoked tofu into 1/2 inch wide squares. Heat up some olive or sesame oil in a frying pan on medium heat. Add your tofu, and cook for 2 minutes on each side.
  3. In a small bowl, add in all the peanut dressing ingredients. Stir until all the chunks are gone and the dressing is smooth. Add more warm water if you want the dressing to be thinner.
  4. Drizzle your dressing over the salad and top with peanuts and green onion. Have the tofu on the side or mixed in.

    I’ve never had smoked tofu, but I love anything and everything smoked…so I’m pretty sure I’d be on board here. Plus, if I’m allowed to drown it in peanut sauce, then all is good with the world! 🙂
