Usually I’m not a purchaser of herbs.
With the exception of basil (mm), I usually make do without. Reason being is that I will buy it for a recipe and use about 4 stems of the cilantro, before it slowly turns to a brown-y green mush in my vegetable drawer. Which then forces me to plug my nose every time I open the fridge until I FINALLYYYY throw it out. This 5 minute cilantro pesto changes the fridge game, completely.
This weekend was different. No particular reason why, but the smell of the cilantro was just so enticing (I am part of the 50% of people that LOVE the herb) that I figured I would find a way to work it into my meals for the week.
I already had a couple jalapenos and parsley in my cart, so my mind was moving quickly! I had planned to make some Mexi-inspired stuffed peppers for the week, and was thinking about the green avocado dressing that came with my last Mexican restaurant outing. I needed a sauce like that on the side!
Usually I douse anything Mexican-themed in Frank’s hot sauce, but this 5 minute cilantro pesto alternative is MUCH healthier. There’s a hint of spice, a splash of lime, and some garlic to give it a kick! After heating up my stuffed peppers at work, I generously spread my homemade pesto all over the pepper.
It was the perfect addition!
I was pretty rough with my estimates, but I just ended up throwing in about half the bunch of cilantro I bought, ¼ of the parsley, some avocado, garlic, lime juice and the jalapeno. I added a couple tablespoons of olive oil initially, slowly adding more based on how well the sauce was blending. I had to stop a few times and scrape down the sides of the food processor before all the ingredients blended together neatly.
