10 Minute Apple Walnut Salad

I am currently sitting here, trying to talk myself out of buying a new camera that will probably cost me around $1,000 Canadian dollars, just because I think it will make my Instagram feed look a bit better.

Also, lets not forget that I currently have an iPhone 6S, a Canon DSLR, a drone, the DJI Osmo, plus access to a slew of photographers who love to shoot fitness models.

WHY, oh why, do people always want more?! Trust me, I see the ridiculousness of the situation.

I also hate that my beliefΒ is that once I get this new camera, my feed/photos/blog will lookΒ SO good that I will obviously become successful, rich, famous, and therefore, happy. See? It all makes so much sense as to why I need to drop $1,000 for a new camera.

Realistically though, I am broke after buying a home, so I probably won’t be able to afford the coveted Canon G7 X. I will just have to wait until Christmas, or open up a donation page.

Back to this apple walnut salad (which is cheap, super quick, and SO. GOOD).

This summer has been the summer of salads. I’ve been trying out a new one every other week, because a) they’re light b) I can fill them with SO much goodness c) they’re easy to pair a protein with. I’ve been using canned salmon, canned tuna, tofu, and my favorite – grilled shrimps.

I cheated a bit with this one and ended up buying the ready-made greens mix, which is why it was so quick to make. However I did make the dressing from scratch, so lets not completely forget about my cooking skills.

In this apple walnut salad I added slices of Granny Smith apples, cranberries, walnuts, and some goats cheese for a bit of creaminess! The dressing is a light mix of apple cider vinegar, dijon dressing, and a fewΒ other ingredients.

As I mentioned above, I grilled a bag of shrimps and brought them on the side to eat with my salad. It was the perfect, well rounded lunch!

Ingredients
Salad
  • 1 package mixed greens
  • 1/2 cup walnuts slightly broken
  • 1/2 cup dried cranberries
  • 2 granny smiths sliced
  • 1/2 cup goats cheese crumbled
Dressing
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 1 tbsp honey dijon mustard
  • 1 clove garlic minced
  • salt & pepper to taste
Servings: servings
Instructions
  1. Place your package of mixed greens into a bowl. Wash and slice up your apple, into about 1.5 inch size pieces. Mix into the greens
  2. Top with walnuts, cranberries, and crumbled goats cheese
  3. In a mason jar, add all of the dressing ingredients. Shake thoroughly, until everything is completely combined.
  4. Optional: Add your own protein to this meal if desired!

    I totally feel ya. I felt the same way about my new phone. I dreamed about getting one for months because I was sure my old AF HTC was holding me back from greatness. Incidentally, the phone made my life so much easier and it takes amazing pictures so I no longer had to take pics for IG on my DSLR then transfer to my phone (which was a huge hassle). So I am much happier, but sadly not any richer o.O
    p.s. this salad and your IG feed look bomb AF so you could prob just save that 1k to spend on ready-made greens instead LOL

    And I feel you – I’ve wanted a new lens for my camera forever but I just can’t justify spending the money on it right now (with all the house renovations, etc. etc.). Someday, someday!
