Healthy Vegetable Lentil and White Bean Soup

Someone recently pointed out to me that winter was, in fact ending quite soon. Of course I was very happy to be reminded of this fact, but it also made me a little concerned. I had just suffered through endless and ENDLESS months of winter, but had hardly made a single soup! Soup is the perfect meal for winter time – it is not only very healthy, packed with protein and vegetables, but also easy to make and wonderful on a cold winter night (or to take for lunch).

This soup in particular is vegetarian, but I added lots of kidney beans and lentils to up the protein.Β Which brings me to another reason as to why I love making soup – it’s so CHEAP! Kidney beans go for like a buck a can or less, and I can find a big bag of green lentils for $3. They say nothing in life is free (I might have just made that quote up), but this soup comes pretty damn close!

Hearty Vegetable Lentil and White Bean Soup

Serves: 5 bowls
Ingredients
  • 3 tbsp olive oil
  • 1 white onion, chopped
  • 4 cloves garlic, minced
  • 3 carrots, peeled and chopped
  • 1 tsp curry powder
  • 2 tsp cumin
  • 800 mL can chopped tomatoes
  • 1 can kidney beans
  • 1 cup of dried green lentils
  • 4 cups vegetable broth
  • 3 cups water
  • 2 cups chopped kale
Instructions
  1. In a large pot on the stove, heat up the olive oil on medium heat
  2. Add in the onion and carrot and cook for about 5 minutes
  3. Next, add in the minced garlic as well as the curry powder and cumin. Cook for about 1 minute, stirring constantly
  4. Drain the tomatoes in a strainer, as well as the kidney beans, and add them both to the pot. Stir
  5. Add in the lentils with the vegetable broth and the water
  6. Cover the pan with the lid, and bring to a boil. Let simmer for about 30 minutes, or until the lentils are soft.
  7. Just before serving, add in the chopped kale and stir for 2 minutes until soft
Notes
Top with lemon juice or Franks hot sauce for an extra kick!
