Someone recently pointed out to me that winter was, in fact ending quite soon. Of course I was very happy to be reminded of this fact, but it also made me a little concerned. I had just suffered through endless and ENDLESS months of winter, but had hardly made a single soup! Soup is the perfect meal for winter time – it is not only very healthy, packed with protein and vegetables, but also easy to make and wonderful on a cold winter night (or to take for lunch).

This soup in particular is vegetarian, but I added lots of kidney beans and lentils to up the protein. Which brings me to another reason as to why I love making soup – it’s so CHEAP! Kidney beans go for like a buck a can or less, and I can find a big bag of green lentils for $3. They say nothing in life is free (I might have just made that quote up), but this soup comes pretty damn close!
