Easy Egg Wraps

I find meal prep extraordinarily boring, so I like to make different things each week to change it up. And as someone who doesn’t eat meat, I don’t have as many options as everyone else. Although I still don’t think I would eat chicken with rice and veggies every day if I had the option.

Since I am a lover of eggs (yes, I will eat chicken babies), I like to make egg wraps for my lunch. Of course I combine it with something else – an apple, hummus and veggies, mixed nuts, etc. But this wrap is good for those who want something a little different!

Ingredients

2 boiled eggs
Green onion chopped up
1 tbsp. Mayonnaise (or plain Greek yogurt for you exciting people)
½ tbsp. Dijon Mustard (only if you like mustard with your eggs? I guess I do)
Cherry tomatoes chopped up
½ avocado sliced
Green  peppers chopped up
1 large whole wheat tortilla

Method

  1. Mash up the egg with the mayo, mustard (if you are crazy like me), and green onion
  2. Spread the mixture on the wrap in a neat fashion
  3. Add the tomatoes, green onion, avocado, and green pepper
  4. Wrap that bad boy up
  5. Eat it.
