Bangin’ Bruschetta

Are you one of those people who gets invited to potlucks, forget they have to bring something at the last minute, and then pops into Tim Horton’s to grab that big box of donuts? Then you feel terrible because everyone else comes in with homemade lasagna, quinoa salads, and cute little gluten free cupcakes, making that box of donuts just look pretty damn pathetic.

I used to hate going to potlucks cause I didn’t ever know what to bring, and whatever I did end up bringing never got eaten except by me. UNTIL one day I saw a giant bag of tomatoes in a produce market for $1 and had an amazing idea.

BRUSCHETTA!

Bruschetta is super easy to make, the ingredients are cheap, and you can save some for yourself after because EVERYONE will eat it at the potluckJ

Ingredients

  • 4 Large tomatoes or 7/8 Tomatoes on the Vine
  • Handful of basil
  • 3 cloves of garlic minced
  • Small red onion
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinaigrette
  • Salt and pepper

Method

Chop the tomatoes up into cm sized pieces and drain the liquid from them in a strainer.

Chop up the basil into tiny pieces (best way is to fold the basil over rather than laying the leaf out flat). Chop up the red onion into smaller pieces than the tomatoes.

Mix together the tomatoes, red onion, basil leaves, and garlic. Drizzle over the olive oil and balsamic vinaigrette.

throw all your chopped ingredients together in a large bowl

Toss everything together with salt and pepper. Serve with a baguette or on crackers.
