Banana Bread Chocolate Chip Oat Bars

We all know that bananas are super good for us; they have lots of potassium, are high in fibre, prevent cramping, and a million and one other health benefits. But what happens when you HATE bananas like I do? Its not that I don’t enjoy the taste (that’s only part of it), but the texture is super weird for me. I also hate the smell. But as soon as I can incorporate them into baking, I love them! I’m sure it has to do with the chocolate chips, but if it works, i’m not complaining. I made these oat bars as a way to incorporate more bananas and use of my Costco sized bag of oats. They’re delicious and best of all, they’re healthy. Try these bad boys out and let me know what you think!

Banana Bread Chocolate Chip Oat Bars

Serves: 12 squares
Ingredients
  • 2 1/4 cups oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 ripe bananas
  • 1/4 cup applesauce
  • 1/4 cup honey
  • 1/3 cup chocolate chips
Instructions
  1. Preheat the oven to 350 degree F.
  2. In a magic bullet or blender, grind the oats down until it resembles a flour texture. Place the oat flour in a large bowl and add the baking powder, baking soda and cinnamon.
  3. Blend together the bananas, apple sauce and honey
  4. Mix the wet mixture into the flour mixture and stir until completely mixed together
  5. Fold in the chocolate chips
  6. Pour evenly into a pan and bake for 15 minutes. Let cool and cut into squares for serving.
Notes
You can freeze these bars as well. I froze mine for over a month and they were still delicious!
