Asian Shrimp Stirfry with Quinoa

StirfryThis dish was one of my favorite to make and to eat! There are so many delicious ingredients in this, and its packed full with vegetables. I also love shrimp, but the shrimp can be substituted with chicken or tofu. Buuuut your best bet is to stay with the shrimp. The sauce for this is slightly spicy because of the addition of sambal oleek, but you can add or subtract to your liking. I made this dish and it lasted me for 3 lunches during the week. I do find that shrimps get a little bit chewy when they are heated up in the microwave, so I prefer to fish them out and add them in after i’ve heated everything up. For my vegetables I used mushrooms, bean sprouts, carrots, green onion and gai-lan. Gai-lan is also known as ‘Chinese Broccoli’ and it is DELICIOUS. It is packed with nutrients and vitamins and very healthy. No wonder the Chinese live for so many years!

Ingredients
  • Stirfry
  • 2 medium carrots, julienned
  • 10 mushrooms, quarted
  • 1 1/2 cup bean sprouts
  • 6 green onions chopped
  • 3 cups chopped Gai lan (chop stalks in about 2 inch pieces)
  • 1 bag of shrimp de-tailed and deveined
  • 1 cup quinoa/rice mix (I use this stuff! http://truroots.com/products/truroots-single-grains/sprouted-rice-quinoa-blend/)
  • Sauce
  • 3 Tbsp soy sauce
  • 2 Tbsp rice vinegar
  • 2 tsp cornstarch
  • 1 tsp sesame oil
  • 1/2 cup vegetable broth
  • 1 Tbsp. sugar
  • 1/2 Tbsp. fresh minced ginger
  • 2 cloves. minced garlic
  • 1 tsp. sambal oleek
Instructions
  1. In a pot cook the quinoa/rice blend according to the instructions
  2. In a large saucepan heat up olive oil over medium heat. Add in the julienned carrots and the stems of the gai-lan
  3. As those vegetables are heating up, start to make the stirfry sauce. In a small bowl combine all the ingredients. Mix until everything is fully combined
  4. Add the rest of the vegetables in the saucepan and pour the stir fry sauce over. Continue to cook for about 4 to 5 minutes
  5. When it is almost done, add the shrimp and mix everything until fully cooked through or heated up
  6. Add your rice blend to a bowl and top with your stir fry mix! Enjoy
